It all started when I was looking for an alternative to regular cookies, as my stomach has been feeling very sensitive lately, so decided to make cookies that everyone could get on board with, after all everyone loves cookies right? This is the recipe I came up with and it turned out delicious, and best of all suitable for all!
Ingredients
1½ cup gluten free plain flour
6-8 tbsp nut butter
1 cup raw coconut sugar
3 gluten free chocolate bars
1tsp baking powder
½ cup almond milk
Directions
- Preheat oven 180C (360F)
- In a large bowl, stir raw coconut sugar and almond milk on to completely dissolved.( or regular sugar and milk of your choice).
- Chop gluten free chocolate/ or ready-made chocolate chips
- Add nut butter and stir in using a spatula ( you can use any butter of your choice).
- Sift in the gluten free plain flour and stir baking powder into the mix.
- Then add gluten free chocolate/ready-made chocolate chips
- Use a spoon to scoop up mixture in to small portions on a baking tray
- Put the tray in the oven and cook for 10 to 12 minutes or until golden brown.
- Remove and let set for a few minutes, then carefully transfer to a plate to cool.
- Leftovers to be stored in an air tight container for couple of days. If to be stored over a longer time, store in the freezer.
